Ube Cloud Matcha
Makes 1 glass.
Ube cold foam
- 50ml whipping cream (heavy cream)
- 10ml whole milk
- 2 tbsp coconut condensed milk
- A few drops of ube flavour extract
Matcha shot
- 2g Mafia Matcha
- 60ml water, heated to 80°C
The build
- 150ml oat milk or coconut milk
- Ice
- Edible flowers, to garnish
How to

Start the cold foam
Add the whipping cream and a splash of whole milk to a jug or frother. -
Add the secret ingredient
Stir in the coconut condensed milk and a few drops of ube extract. The condensed milk is what makes this foam extra silky and rich, a true chef's kiss. -
Whip it up
Whip or blitz the mixture until it turns a soft lilac colour and reaches a light, fluffy texture. -
Prepare the matcha shot
Whisk the matcha with the hot water until smooth and frothy, with no lumps. -
Build the layers
Fill your glass with ice and pour in the oat or coconut milk. Slowly add the matcha shot, then finish with the ube cold foam. -
Garnish and enjoy
To make your drink extra pretty, top with a few edible flowers. Stir and enjoy.
