Just a spoonful turns your everyday matcha into a café-style treat, and it only takes a few simple ingredients to make.
Cinnamon Bun Syrup
Makes about 20 Servings.
Ingredients
- 250g brown sugar (light or dark)
- 300ml water
- 5 cinnamon sticks
- 1 tsp vanilla extract
How to

Dissolve the sugar
Add the brown sugar, water and cinnamon sticks to a saucepan over medium heat. Bring to a gentle simmer, stirring often, until the sugar has fully dissolved. -
Steep
Turn off the heat, cover the pan and let the syrup steep for at least 1 hour, or up to 4 hours for a deeper cinnamon flavour. -
Strain and store
Remove the cinnamon sticks, stir in the vanilla and pour into a sealed glass bottle or jar. Keep in the fridge for up to a few weeks.
How to use it
Add around 20ml syrup to your matcha latte, hot or iced, for an instant cinnamon bun twist. For a hot latte, stir the syrup into your matcha shot, then pour over the steamed milk. Remember, for hot matcha it's always matcha first, then milk.
