How to
-
Make the lychee syrup
Add the full can of lychees, syrup included, to a blender and blend until completely smooth. Transfer to an empty bottle or container. This is your lychee syrup, and there's enough for a few drinks. -
Make the matcha cold foam
Add the matcha, coconut water and heavy cream to a small jar or frother. Froth for 20-30 seconds until thick, silky and foamy. A milk frother makes this super easy. -
Build the drink
Pour your lychee syrup into the bottom of a glass, then fill with ice. Slowly pour over the coconut water, then top with the matcha cold foam for those gorgeous layers. -
Garnish and enjoy
Finish with a light dusting of matcha powder and a few edible flowers. Stir before sipping and enjoy.
Tips for the perfect Lychee Cold Foam Matcha
- Pour the coconut water slowly over the back of a spoon to keep your layers clean and defined.
- You can keep your lychee syrup in the fridge for up to 3 days and give it a shake before using.
FAQs
What does Lychee Cold Foam Matcha taste like?
It's sweet, floral and refreshing, with fruity lychee at the bottom, light coconut water in the middle and a creamy, earthy matcha foam on top.
Can I make this dairy free?
Yes. Swap the heavy cream for oat cream or coconut cream for a fully plant-based version.
Do I need a milk frother to make matcha cold foam?
A frother makes it easiest, but you can also shake the ingredients hard in a sealed jar for 30-45 seconds.
Can I use fresh lychees instead of canned?
You can, but you'll need to add a little sweetener like honey or simple syrup, as canned lychees get their sweetness from the syrup they're packed in.
