Lemon pie. But make it matcha 🍋🍵. The lemon cold foam alone is worth making this for.
Ingredients:
Lemon Syrup
- 100g sugar
- 120ml water
- Zest of 1–2 lemons
- ⅛ tsp vanilla extract
Lemon Pie Cold Foam
- 40ml oat cream
- 30ml oat milk
- 30–45ml lemon syrup
The Build
- 3g Matcha
- 40ml water at 70–80°C
- 200ml oat milk
- Ice
How to:

Make the lemon syrup
Add the sugar, water, vanilla extract, and lemon zest to a small saucepan over medium heat. Stir until the sugar dissolves, then simmer for 10 minutes. Remove from the heat and leave to infuse. Once cooled, strain out the lemon zest. -
Make the lemon pie cold foam
Whisk the oat cream, oat milk, and 2–3 tbsp lemon syrup until thick, creamy, and foamy. -
Prepare the matcha shot
Sift and whisk 3g matcha with 40ml water at 70–80°C until smooth and lump-free. -
Build the drink
Fill a glass with ice and pour in the oat milk. Slowly pour over the matcha shot and finish with the lemon pie cold foam.
Tart, sweet, and somehow exactly what you didn’t know you needed 🍋.
