Introducing Mafia Matcha Yame Saemidori - a single-origin ceremonial matcha from an award-winning Yame producer, Keito Ushijima, in Fukuoka. Selected for its naturally silky sweetness and ultra-clean finish, this first-harvest Saemidori is meticulously sorted and slow stone-milled to a superfine powder that whisks into dense, glossy crema with a luminous jade-green hue. Expect notes of vanilla and sweet pea over soft young-green umami, near-zero bitterness, and a finish that’s effortlessly smooth - a pure, elegant expression of Yame terroir and craft.

Process: 20–30 days’ shade; granite stone-milled
Prepare 2g (about 1 tsp) with 70 ml of hot water at 65-80º C. Whisk and enjoy hot or cold with your favourite milk.
Store matcha away from direct sunlight and heat, will help preserve its vibrant green colour and flavour. Fridge is best! Be sure to close the container tightly after each use to prevent the entry of moisture and oxygen.
